How Jaggery Is Made from Sugarcane: A Traditional Process from Cane to Pack

Jaggery has been part of Indian food traditions for generations. Made from sugarcane juice, it goes through a surprisingly simple process—but getting good jaggery requires careful handling at every stage.

1. Selecting the Sugarcane

The process begins with selecting suitable sugarcane for jaggery production.

The quality and condition of the sugarcane can influence the juice as well as the final jaggery. The cane is therefore handled carefully before it moves to the crushing stage.

2. Crushing the Sugarcane

The sugarcane is fed into a crusher to extract its juice.

During crushing, the rollers press the cane and separate the juice from the fibrous portion of the sugarcane, commonly known as bagasse.

This fresh sugarcane juice becomes the starting point for jaggery production.

3. Filtering the Sugarcane Juice

After extraction, the juice is filtered to remove unwanted physical impurities that may have entered during harvesting, transportation or crushing.

Proper filtration is an important part of maintaining cleanliness and consistency during processing.

4. Heating and Concentrating the Juice

The filtered sugarcane juice is transferred to the boiling pan and heated.

As the juice heats, water gradually evaporates and the liquid becomes increasingly concentrated. The process is carefully observed until the juice reaches the required consistency and jaggery stage.

This stage requires experience because the final consistency depends on the type of jaggery being prepared.

5. Preparing Different Types of Jaggery

Once the required stage is reached, the concentrated sugarcane material can be prepared in different forms.

After the sugarcane juice has been concentrated to the required jaggery stage, the material undergoes an additional cloth-filtration step before it is prepared for packing.

This extra filtration is an important part of our Semi Solid Jaggery manufacturing process and helps us maintain the desired product consistency and cleanliness.

6. Moulding and Product Preparation

For moulded varieties such as Acchu Bella, Aani Bella and Bucket Mould Jaggery, the concentrated jaggery is prepared and transferred into the appropriate moulds.

For Jaggery Powder, the process is adjusted to obtain the required powdered form.

For Semi Solid Jaggery, the consistency is maintained according to the intended semi-solid format.

7. Hygienic Packing

The finished jaggery is packed according to the requirements of each product format.
